Hi guys! It's been far too long since I've posted. I feel a bit like a broken record but as some of you probably know, I recently started a business designing wedding invitations and it's taking up so much of my time that it's been hard keeping up with everything else. Even my lovely Wellnesting readers.
But I wanted to leave you with this Watermelon Agua Fresca recipe I recently posted on my Pipkin Paper Company blog because it's just that good. If you're not familiar with Agua Fresca, it's a light fruit juice mixed with a bit of sugar and some water. I added a splash of vodka to turn it into a cocktail but it's just as good without the alcohol, so feel free to leave it out.

Watermelon Agua Fresca
3 cups watermelon, sliced
1 cup water
1/3 cup agave nectar
1/2 lime juiced
1/2 cup vodka
- Place the watermelon, water, sugar, lime juice and vodka in a blender or food processor. Puree on high until smooth.
- Pour into two tall glasses (if you like, you can strain the watermelon pulp from the liquid, but I like to leave mine in).
- Garnish with a watermelon wedge and some extra limes.
