Surprise! It’s time for more popsicles.
If you follow me on Pinterest you’ll know that I’m going through a rather intense popsicle phase right now, which is slowly boiling over into the blog.
After my last batch of suped-up blackberry pie popsicles (with a ginger snap crust to boot!), I was ready for something lighter, a tad less sweet, and heckuva lot easier. Because let’s be honest, popsicles that take 30 minutes to make and then another 3 hours to freeze, while being delicious (said while mentally singing the Fergie song *d-to-the-e-to-the-l-i-c-i-o-u-s* on blast) aren’t always fun.
And since I’m all about jumping on the less-kitchen-more-fun bandwagon whenever it comes around, I went back to the drawing board and came up with these babies.
Aren’t they lookers?
With just two ingredients, they only take an hour, tops, to make, freeze, and eat so you can spend less time in the kitchen and more time enjoying your summer.
Easy Coconut Water Ice Pops
2 c coconut water (I like the Zico brand, but any will do)
Frozen fruit: peaches, blackberries, raspberries, plums, etc.
Popsicle molds and sticks
Place as much frozen fruit into the bottom of each mold as you comfortably can. Then top off with coconut water and insert the popsicle stick in the center. If the stick wants to lean one way or another, place fruit around it to keep it centered. Freeze for an hour and enjoy!
