Better than Whole Foods Garlic Kale Recipe

Is the weekend really over already? Hopefully you had a wonderful time celebrating with family and remembering all those who have served this amazing country of ours. In addition to seeing lots of familiar faces and partaking in a concert/baseball/BBQ extravaganza (separately, although it would have been epic had it all been at the same time), the hub and I also packed in all 10 episodes of Band of Brothers in a measly 48 hour period.

I blame the concert/baseball/BBQ extravaganza -- but all in all it was the perfect way to spend a long weekend at home.

But now it's time to get back to business and with that comes this delicious garlic kale recipe.

Yes, you heard me right.  I said "delicious" and "kale" in the same sentence. And I'm not even lying.

By now you guys know I have a slight obsession with Whole Foods. It's within walking distance to our apartment and it's often our fall-back on nights when I don't want to cook dinner and I reeeally don't want to order out. Well, at said Whole Foods they have a salad bar with all sorts of healthy foods just waiting to be consumed by tired city folks who don't want to cook dinner.

And at said salad bar there's this creamy garlicky kale.

And it's the best thing I've ever had. It's dreamy and salty and slightly tangy and all around amazing, and I would even go so far as to say that it elevates kale to a food group all it's own. An eat-nothing-but-kale-all-day-every-day food group. Don't even try telling me you don't like kale, because it's obvious that you've just never had this kale.

Oh, and the garlic. The garlic.

Just don't eat this before a dinner date.

Creamy Garlic Kale Recipe
 

Ingredients

2 cloves garlic
3 tbsp tahini
2 tbsp lemon juice
3 tbsp nutritional yeast
2 tbsp coconut aminos
1 tbsp apple cider vinegar
2 tbsp almond milk
Pinch salt
1 bunch raw kale, stems removed and torn into bite sized pieces
1/8 c pecorino romano cheese, shredded

  1. Wash and dry kale. Place in a large bowl.
  2. Puree all ingredients except kale and pecorino in a food processor until smooth.
  3. Pour dressing over kale and mix thoroughly.
  4. Allow to marinate in the refrigerator for 30 minutes to an hour.
  5. Top with pecorino and a drizzle of tahini prior to serving.
