I know it’s fall. Really, I do.

It’s just that with the move and getting settled and hustling as if my life depends on it, I’m not quite ready to move on from the warm, sun-filled days of summer. I feel like I never really got to enjoy summer this year, and since it’s my favorite season, I’m desperately clinging to whatever’s left of it – which, admittedly, isn’t much. So here is one last throw back – a white flag if you will. After this, it’s all fall all the time.

Today I bring you, key lime pie milkshakes.

And let me just say, dear lord, these things are good. You hear me say that a lot, but it’s true. These.  Are. Amazing. Like summer in a glass. I've always been obsessed with key lime pie but ever since I cut out dairy (and thus, condensed milk) I haven't found a key lime pie I liked. So I decided to go left, when everyone else was going right and make a sippable version.

I get it if you’ve already moved on and were desperately hoping for some pumpkin thing in a glass. Next time, guys. Next time.

Key Lime Pie Milkshakes

Ingredients

1 pint vanilla coconut milk ice cream (I like the no SO Delicious brand with no added sugar )
2 tbsp key lime juice
1/3 c almond milk
1 tsp lime zest
2 tbsp honey
2 graham crackers, crushed (optional)
Whipped coconut cream and extra graham cracker crumbs for dusting
 

Blend everything except the coconut cream in ablender until smooth. Pour into a glass and top with coconut cream and extra graham cracker crumbs.
