Hooray for peach season! Whether fresh from the tree or as part of a refreshing summer dessert, peaches will always hold the title of "Best Summer Fruit" in my book. When I saw some peaches at the farmer's market the other day, I immediately knew what I wanted to do with them - make ice cream. But, seeing as how we don't own an ice cream maker and Chuck put the kibosh on me running out and buying one, I had to get crafty. Enter our Vitamix.
Now, while this recipe isn't technically ice cream in the traditional sense, I think you'll find that for a 5 minute, dairy-free dessert, it does the trick.
5-Minute Peach Ice Cream Recipe
1 1/2 c frozen peaches (you can either use pre-packaged peaches or freeze your own)
1/4 c chilled coconut cream
1/2 tsp vanilla
1/2 c almond milk
2 tsp agave nectar
1/2 tbsp lemon juice
Blend all ingredients in a blender until smooth. Add more almond milk if necessary until you get a creamy consistency. Pour into a serving dish and eat immediately or freeze up to one month.
Note: If freezing, be sure to stir the ice cream every hour until it completely hardens to incorporate the icy top layer and replace the churning action of a traditional ice cream maker.
